I'm finding that I am not being challenged or getting the most out of my internship. How can I change this?

If you feel that you're not being challenged, ask your supervisor if you can take on some extra work. If you're taking on more work that's similar to what you've been doing, they shouldn't have any objections. If, however, you want to take on more responsibility or more difficult work, ask your supervisor if you can have a "trial period" where you take on some of this extra responsibility to see if you're capable of handling it and doing a good job. They'll have nothing to lose, as if they don't think you're ready you can keep doing what you've been doing. If you do well, you'll both end up better off: you'll get more out of your internship, and they'll be able to delegate even more to you.
Your internship is supposed to push you to new limits and give you a leg up in the future. If you're not being challenged or getting anything out of your internship, it's time to discuss your goals with your direct supervisor. The best thing you can do is offer to do more for the company; invest yourself more. There's no way they'll say no.
Internships are your opportunity to gain experience that you'll need when you join the workforce, so if you feel that you're missing out, you need to speak up. Have a serious discussion with your manager/supervisor and let them know how you're feeling. Odds are, they're going to appreciate the fact that you're taking initiative and reward you by adding responsibilities to your plate that will benefit you.

It's important to have this conversation, and it'll prepare you for future conversations, as honesty is the best policy when it comes to speaking with your manager about how you're feeling about your workload. And if your manager isn't willing to make a change, then you definitely should! Internships need to benefit you, and if they aren't, a change needs to be made, one way or another.
